Campfire Cooking - Wild Garlic Soup Recipe

It's wild garlic season! Get hunting in the woodland for this lovely seasonal treat and cook up some quick tasty lunch on the campfire with our easy wild garlic soup recipe.

Ingredients you'll need:

  • Butter or Cooking Oil
  • 1 Onion
  • 4 Large Handfuls of Wild Garlic Leaves
  • 2/3 Potatoes 
  • 1.2L Vegetable Stock

  • 150ml Double Cream

Equipment you'll need:

Method:

  1. Melt the butter or heat the oil in the cooking pot over the campfire.
  2. Finely chop your onion and add to the pot.
  3. Finely chop the potatoes and add, cover and gently simmer the vegetables until soft, stirring often to ensure they don't stick to the pan (add a splash more oil/butter if needed)
  4. Boil some water and make the vegetable stock in the jug.
  5. Pour your vegetable stock into the cooking pot and bring to the boil.
  6. Reduce the heat of the pot by raising your tripod chain/moving to the edge of the fire, until the soup is gently simmering.
  7. Simmer for 10 minutes, meanwhile finely chop the wild garlic leaves and give them a grind in the pestle and mortar.
  8. Check to see if your potato is cooked (the smaller they are - the quicker they'll cook!) add wild garlic leaves and stir.
  9. Simmer for another few minutes.
  10. Stir in the double cream, taste and season as necessary.
  11. Serve into bowls and top with the wild garlic flowers - enjoy!

 

Top tips/things to remember!

Does it smell like garlic?
Make sure to thoroughly check that you have correctly identified any plants before picking an eating, it's always best to take an ID guide with you to refer to. Wild garlic has a strongly recognisable smell when crushed, don't eat it if it doesn't smell of garlic! Make sure that the leaves you are picking can't have been contaminated in any way by traffic or other woodland visitors.

Blend it up?
This soup ideally tastes best if given a quick whizz in a blender, however out in the woods that's not always practical!
If you are planning to enjoy this soup straight away in the great outdoors, away from blenders and electricity, we would recommend chopping the ingredients as finely as possible. It's also best to give the wild garlic a quick crush with a pestle and mortar prior to cooking to help release the flavour.
