This is a recipe we shared a few years back - but one we thought deserved a permanent place on the blog!
Ingredients you'll need:
- 100g Self Raising Flour
- 100g Butter
- 100g Caster Sugar
- 2 Eggs
- 1 tsp Vanilla Extract
- Large Oranges or Lemons
- Chocolate (optional)
Equipment you'll need:
- A Campfire (Either burning charcoal or a fire that's been lit for a while with a deep bed of ash)
- Mixing Bowl or a Large Plastic Jug
- Scales
- Whisk
- Wooden Spoon
- Tablespoon and Teaspoon for Measuring and scooping pulp
- Tin Foil
- Chopping Board
- Kitchen Knife

Method

Mix the butter and caster sugar using the back of a spoon, keep working until softand well combined (if you are making the cake batter in advance at home you can use an electric whisk!)
- Whisk the eggs and add to the butter and sugar mixture. Mixing well.
- Add vanilla extract.
- Gently stir in the self raising flour.
- Set your cake batter aside and cut the tops off your lemons or oranges (not too far down, you need space to fill them!) Set the tops to one side, you'll need these later.
- Squeeze some of the orange or lemon juice into the cake batter and mix.
- Scoop the remaining pulp out of the fruit taking care not to puncture the skin.
- Carefully pour the cake mixture into the fruit -
leaving space for them to rise. If using the chocolate - drop a square into themiddle of the batter!
- Put the top of the fruit you cut off back on top to act as a lid and wrap the oranges/lemons completely in foil.
- Carefully place the wrapped oranges/lemons in the embers in the bottom of the fire.
- Allow to cook for around 20-30 minutes - the cooking time will vary dependent on your fire and how deep the muffins are in the coals, so keep checking!
- Once a cocktail stick or knife comes out of the muffins with no batter stuck to it your cakes are ready to enjoy!

Top Tips!
- As mentioned the key to success with this recipe is having a fire that's died down and is not too flamey or hot.
- Orange skins tend to be larger than lemons so if you are cooking both you may find the lemons cook a lot faster.
- You may find it easier to make the cake mix in advance at home, or alternatively use a boxed cake mix to save time!
- This recipe may take a few trial runs to perfect, so don't give up if your first batch don't turn out quite how you imagined!
